Either pay cash or if you must use plastic, use a credit card at the gas pump since it has more consumer protection than a debit card (even those with credit card logos.)  It can take weeks to get money back in your bank account in a fraud investigation.  Sometimes the bank will give you a temporary credit, but they can take that money back if they cannot prove you were a victim.

It is much easier to get credit charges reversed and your loss is limited to $50 (some credit cards don't put that $50 charge on you.)

Per Digitaltrends.com, there's an app for that!  :)
https://www.digitaltrends.com/mobile/skimmer-scanner-app/

"The Skimmer Scanner app checks for nearby Bluetooth transmissions and alerts you when one is detected. “Many of these devices go undiscovered until they’re removed by the scammers,” Nathan Poole (who designed the app) told ZDNet. “I think what we’ll find as more and more people use the app is that there are more skimmers out there than anyone previously thought.

Currently, the app is only available for Android and there are no plans for an iPhone version. The code is open-source, however, so feel free to tinker away."
