Dandelion recipes

Last night a friend was complaining about all the dandelions coming up in her yard and how "early" spring came.
I teased her saying "You should pick them for dinner!"

Because she knows me well, she replied "You probably are out picking them aren't you?"
I hadn't started on that, but I might have to before a frost gets them :)

My great-grandmother lived a pioneer lifestyle as a homesteader and was still vital into her 80's.
I used to watch her put up dandelion jelly.  I even found a version on Martha Stewart's website
so this is not that unusual or "weird".  it is very honey-like.

In looking for more information, I found dandelions have a full day's supply of Vitamin A and

I'm getting a few here & there just starting  - freezing shouldn't hurt the flower head content right?   We're going to get cold again next week and it will set them back so I'd like to save what I have.

Yes, you can if you don't have time to make something or drying them will not suffice for your desired use.
We normally got them right into jelly or salad immediately when I was a kid so I learned from researching your question :)

Before we moved to our current location I used to embarrass the kids & hubs by picking our dandelions in front of the neighbors. But they sure liked the jelly I made from it!

I also used it in some preparations for mom when she was sick.

At this location I only have Catsear, no dandelion. And no one would pay one lick of attention to what I'm doing in my yard even if I was picking weeds!

They forgot the mustard sandwiches!  Used to like them when I was a kid, but only the brown mustard not the yellow, LOL.

My husband taught me about mayo sandwiches.  I prefer tomatoes in them.  He especially likes them made with saltines instead of bread.  I thought it was a Southern thing, but now I see it goes back to his mother being a Depression baby (to where most of his frugal habits trace back.)
