Pickled hot dogs?

So, a few years back when I was station at Ft Meade, we'd go to Baltimore on the weekends to hang out. There was a hot dog shop where the cook has a jar of pickled hit dogs on the counter. When you ordered he'd pull the dogs out of the jar, heat em up on the grill, and bun them.
Those slightly spur hot dogs were awesome and werent refrigerated, at least there in the cart.
So, 1) any pickled hot dog experience anyone? I found a few recipes, but like the link below they arent for grilling back up.
2) think it would be a safe way to store them without refrigeration?

Made them before, it's pretty straight forward. Never tried to cook one, mostly made them for straight snacking.

Now you have me curious.
