PUMPKIN COOKIES
2 cups packed brown sugar
1 cup oil
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon cinnamon
2 teaspoons vanilla
1 can (15 ounces) pumpkin
4 cups all-purpose flour
2 cups raisins
1 cup nuts (optional)
Cream brown sugar and oil. Add all ingredients but flour, raisins, and nuts.
Mix thoroughly. Add flour one cup at a time, mixing well after each cup.
Stir in raisins and nuts. Drop by teaspoonfuls onto ungreased cookie sheets.
Bake at 350 degrees for about 12 minutes.
Makes 7 dozen cookies.
