I don't know about you, but sometimes, after putting food in jars freezer, dehydrator....I am too tired to eat all the good fresh stuff.
Since I have enough pickles and no room for frozen cucumber salads, I had to try something new. Today, I used onion garlic, two Jade cucumbers over a foot long, avocado and sour cream, to make a cucumber soup. The recipes are on line and everything has additions and subtractions. I used some vegetable broth in mine. The recipe turned out really well, with some spices. I used the blender and cooking it up long enough to soften it. We enjoyed it warm. I have left over in the fridge to try cold.
Next, I may shred a bunch of zucchini, put it in pint canning jars and covering it with a little pineapple juice. I store it in the freezer in a little over two cups per bag, but at the rate it grew, well, man can not live on bread alone...
I will also make up eggplant casseroles, with cheese and tomato sauce and freeze them.
Gardens are expensive. Seeds and dirt are expensive. Best to use all we can! Our chickens are also eating well! Hope you all can find a new way to use a crop that does really well for you this year.
