Bosch Blender Pancakes

Combine in blender the following ingredients and mix on speed 3 for 2 minutes:
1 C. wheat kernels (or a mix of wheat, oats, kamut, spelt, etc.)
1 C. milk

Add and mix for 2 more minutes:
1/2 c. milk

Add:
2 eggs
1 tsp. salt
1/3 c. oil
1 Tbsp. honey

Blend well. Just before cooking add:
1 Tbsp. Rumford Baking Powder (Rumford is double acting and will make them fairly fluffy)

Blend in gently. Pour batter onto hot griddle or waffle iron. Can add fresh/frozen (thawed) blueberries, bananas, apples, etc. on top of poured batter for a delicious addition!

Whole Grain Apple Muffins

2 cups oatmeal
1 cup whole wheat pastry flour
1/2 cup sunflower seeds
1/4 cup flax seeds
1 teaspoon caraway or cumin seeds (optional)
2 teaspoons aluminum-free baking powder
1/2 teaspoon sea salt
1 egg, organic, free range preferred
1/4 cup unsalted butter, melted
1 cup nut or rice milk

Preheat oven to 350 degrees. Oiled or paper lined muffin cups.
In a medium bowl, mix together oatmeal, flour, sunflower, flax, and caraway seeds, baking powder, and salt.
In a small bowl, whisk together egg, butter, and milk. Pour the liquid ingredients into the oatmeal mixture and stir until blended.
Spoon into prepared muffin cups, filling each three-fourths full. Bake in preheated oven until tops are golden, about 30 minutes.
Remove muffins to a cooling rack or turn upside down in muffin pan to cool bottoms and keep tops moist.

Whole Wheat Bread Recipe

100% Whole Wheat Bread Makes 6 Loaves (using BOSCH Kitchen Machine)
6 C. HOT tap water
12-16 c. whole wheat flour
2/3 c. oil
2/3 c. honey
2 Tbsp. Dough Enhancer
2 Tbsp. SAF Instant Yeast
2 Tbsp. Gluten
2 Tbsp. Salt

Pour hot water into Bosch bowl. Add approx. 6 cups flour and remaining ingredients except salt. Use the (M) momentary switch to mix well. Add approximately 5 more cups flour and the salt. Turn to speed 2 and continue adding flour ¼ cup at a time until dough pulls away cleanly from sides of bowl. Continue kneading on speed 2 for another 5-6 minutes.

Oil/grease hands and counter. Divide dough into equal portions and shape into loaves. Put into well-greased pans and let double in size. (you can preheat your oven to 150, turn off for a few minutes - this makes an ideal place for rising bread!) Bake at 350 for 25-30 minutes or until golden brown. Cool on wire racks. Top of loaves can be brushed with water or butter to keep crust soft.

Dough can also be used to make rolls, pizza crust, cinnamon rolls, breadsticks, hamburger buns, etc… ENJOY!

Whole Wheat Pumpkin Orange Muffins

In a large bowl, add and combine well:
2 eggs
3/4 cup sugar
1/4 cup oil
1/2 cup apple juice or orange juice
1 cup canned pumpkin
1/2 tbsp grated rind of an orange

In a smaller bowl, combine well:
2 cups whole wheat flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp mace-nutmeg
1/8 tsp ground cloves
1/2 cup chopped walnuts or pecans

Combine wet and dry mixtures and fold together gently until just mixed. Spoon into prepared pan. Bake at 400 degrees for 20 to 25 minutes. Remove from pan and cool on rack. Makes 12 medium-sized muffins.
