It is not "scattered, smothered and covered", but if even Waffle House is not open, it might be a lifesaver!  Here's another good food storage recipe from my friend in Houston.

CHEESY HASHBROWNS 
(Pantry Cooking II)


Find dehydrated hash browns in your grocery store aisle that stocks dried potato mixes such as au gratin or scalloped potatoes by Betty Crocker.  They can also be found in warehouse stores like Sam’s and Costco.

Cheddar cheese powder can be ordered online.

Ingredients

2 tablespoons vegetable oil

2 cups dehydrated hash browns (shaken down)

1-3/4 cups water

1/4 cup milk

4 tablespoons cheddar cheese powder

1 teaspoon onion powder

Directions
Heat oil in a large skillet over medium-high heat.  Add potatoes.  Cook 2 to 3 minutes or until lightly browned, stirring frequently. 

Add water and stir.  Bring to a boil.  Reduce heat to medium and simmer 8-10 minutes or until water is absorbed. 

Mix milk, cheese powder, and onion powder until smooth.  Stir into cooked potatoes until potatoes are evenly coated. 

Serves 4.
